Hello and welcome to The Cooking Wardrobe. I am so pleased you came over because today I am show casing one of my grandma's Sunday specials which we all loved and it is a winner in my house as well.
Ingredients:

1 cup vegetable oil, 600 grams chicken pieces, 1 large brown onion(chopped) 2 fresh tomatoes and 4 dried birds-eye chilies (blended), 11/2 tbs peanut butter, 1 tbs tomato paste, a few basil leaves, black pepper and 2 tsp chicken stock powder. |

Season the chicken with 1 tsp stock and black pepper |

In a sauce pan over high heat, steam chicken for about 7 minutes then remove and set aside |

Pour oil into a saute pan and fry chicken pieces in batches |
 |
Add onions, chilies and fresh tomatoes and cook for 3 minutes |
 |
Now add peanut butter, tomato paste and remaining stock powder and cook for another 3 minutes |
 |
lower heat, add chicken and 1/2 cup water and let it simmer uncovered for 10 minutes. |

Finally, stir through basil |
 |
I served it with cassava cooked in boiling salted water for 15 minutes. Enjoy |
